Oats and Such

BREAKFAST BOWL

Ingredients

  • 3 cups rolled oats
  • 2 tbsp. chia seeds
  • 2 tbsp. flaxseeds, ground
  • 1/4 cup pumpkin seeds
  • 1/4 cup toasted coconut flakes
  • 1/4 tsp. cinnamon, ground
  • 1 tsp. vanilla extract
  • 1 tbsp. coconut oil
  • 2 tbsp. pure maple syrup

Additional Toppings

  • 1 banana, sliced
  • 1 sliced apple
  • Fresh berries of choice
  • Honey or maple syrup
  • Yogurt of choice

Directions

  1. Place all ingredients, except toasted coconut, in a bowl and mix well.
  2. Spread the mixture in a glass baking dish or cookie sheet.
  3. With a spoon, pat mixture down lightly.
  4. Bake at 325°F for about 20 minutes.
  5. Stir the mixture and spread evenly in pan.
  6. Return mixture to the oven for 10-15 minutes or until golden brown.
  7. Remove from oven, add toasted coconut, and mix.
  8. Cool completely before placing in individual bowls and topping it with fresh berries, yogurt, honey, sliced apples and bananas.

Note: Any salad dressing of choice can be used, with proteins such as baked chicken, marinated beef, fish, or fried or boiled eggs added.
