Gambian Peanut Soup

Ingredients

  • 1 lb. chicken breast, cut into 1/2-inch cubes
  • 1 large onion, diced
  • 2 tbsp. olive oil
  • 3 cloves garlic, diced
  • 3 tomatoes, diced
  • 3/4 cups, peanut butter, smooth
  • 2-3 Scotch bonnet peppers
  • 4 cups pumpkin or butternut squash
  • Salt and pepper to taste

Directions

  1. Heat the oil in a pan.
  2. Sauté chicken, onions and garlic. Cook for 5 minutes.
  3. Add tomato paste, chilis, peanut butter and stir.
  4. Add bouillon cubes and water.
  5. Bring the mixture to a boil. Cover and reduce heat.
  6. Cook for 15 to 20 minutes.
  7. Stir and add pumpkin or butternut squash.
  8. Cook until squash is tender.
  9. Salt and pepper to taste
  10. Serve over rice.
