Costa Rican Gallo Pinto

Ingredients

  • 2 tbsp. cooking oil of choice
  • 2 cups short-grain white rice, cooked
  • 2 cups cooked black beans
  • 1/2 cup Salsa Lizano
  • 1 red bell pepper, diced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Directions

  1. Heat oil in a large skillet over medium heat. Sauté bell pepper and onion for 6-8 minutes.
  2. Add minced garlic and cook for 1 minute.
  3. Add black beans and Salsa Lizano.
  4. Stir and simmer until 2 of liquid evaporates and flavors mesh.
  5. Stir in cooked rice.
  6. Cook until heated through and most of the liquid is absorbed.
  7. Stir in chopped cilantro.
  8. Serve with Salsa Lizano and salt and pepper.
