Oats and Such
BREAKFAST BOWL

Ingredients
- 3 cups rolled oats
- 2 tbsp. chia seeds
- 2 tbsp. flaxseeds, ground
- 1/4 cup pumpkin seeds
- 1/4 cup toasted coconut flakes
- 1/4 tsp. cinnamon, ground
- 1 tsp. vanilla extract
- 1 tbsp. coconut oil
- 2 tbsp. pure maple syrup
Additional Toppings
- 1 banana, sliced
- 1 sliced apple
- Fresh berries of choice
- Honey or maple syrup
- Yogurt of choice
Directions
- Place all ingredients, except toasted coconut, in a bowl and mix well.
- Spread the mixture in a glass baking dish or cookie sheet.
- With a spoon, pat mixture down lightly.
- Bake at 325°F for about 20 minutes.
- Stir the mixture and spread evenly in pan.
- Return mixture to the oven for 10-15 minutes or until golden brown.
- Remove from oven, add toasted coconut, and mix.
- Cool completely before placing in individual bowls and topping it with fresh berries, yogurt, honey, sliced apples and bananas.
Note: Any salad dressing of choice can be used, with proteins such as baked chicken, marinated beef, fish, or fried or boiled eggs added.
