Ella’s Caribbean Nachos

Ingredients

  • 1 can (40 oz) black beans, drained
  • 1 cup canned corn, drained
  • Tomatoes, chopped
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 2 cups shredded cheese
  • 11/2 bags (16.5 oz each) nacho chips
  • 1/2 tsp. hot pepper sauce
  • 1/4 cup sliced green peppers
  • 1 tsp. paprika
  • 2 tsp. chili powder
  • 1/2 cup chopped cilantro
  • 1/2 tsp. garlic powder
  • 11/2 tsp. onion powder

Directions

  • Heat black beans with garlic, onion, chili, paprika, and hot pepper sauce in a pot.
  • Place nacho chips (freshly made or purchased) on a baking sheet.
  • Cover the chips with the bean mixture and drained corn.
  • Sprinkle with 2 cups of shredded cheese and bake at 350°F until the cheese melts.
  • Remove from the oven and sprinkle with tomatoes, cilantro, green onions, avocado, and dollops of sour cream.
  • Serve with the remaining cheese and pepper sauce.
