Aunt Geri’s Green Gumbo

Ingredients

  • Turnip greens, collard greens, mustard greens, cabbage, spinach, kale, swiss chard (all washed and chopped)
  • 1 onion, chopped
  • 2 tbsp. olive oil
  • 1/4 cup all-purpose flour
  • 2 tsp. salt
  • 3 bay leaves
  • 1 celery stalk, diced
  • 2 garlic cloves, minced
  • Water

Directions

  1. Triple wash greens very well to avoid dirt. Sauté onion, celery, and cabbage in olive oil.
  2. Add chopped greens and bay leaves.
  3. Cook down, stirring to prevent sticking.
  4. Pour in water, add salt and pepper.
  5. Cook for 45 minutes until the greens are completely cooked.
  6. Mix flour with 2 tablespoons of water to make a slurry. Add to thicken gumbo.
  7. Cook for an additional 10-15 minutes.
  8. Serve with steamed, fluffy rice and enjoy!
